Components:
Before starting my recipe I always start with the sauce and then start the process with the eggplants
▪ 3 medium eggplants
(You will cut them front and back)
On a cutting board you will slice about 1/2 cm and a little more. In a pan we will add a little salt, we will add the eggplants and we will put salt on top and we will leave them for 10 to 15 minutes. Then we will wipe them with absorbent paper and we will bake them in the pan or in the oven or we will fry them. If the eggplants they are bitter this is a necessary step.
▪ 4 - 5 tablespoons of olive oil
▪ 2 florin peppers (Cut into thin slices)
▪ 2 dry onions (Cut into thin slices)
I want the onion to caramelize and release what sugar
▪ 4 tablespoons of water
Depending on how you cut the vegetables, the cooking time will vary until they are tender.
If we need to add hot water, we will. This is something that the vegetables themselves will show us, whether they have softened or not.
▪ 1 clove of fresh or CONFIT garlic
▪ 1 tablespoon parsley (fresh or frozen)
▪ 400ml fresh or canned tomatoes
(If the tomatoes are sour, add
▪ 1 teaspoon of sugar)
Optional : We can use the herbs
but also the spices we like the most.
I used : ▪ 1/4 teaspoon oregano
▪ 1/4 teaspoon of black pepper and
▪ 1/2 teaspoon of salt
(Before adding salt, taste the eggplants first to make sure they are not salty)
▪ salt and pepper ( at will )
▪ Olive oil for baking or frying
You can also do this process in the oven,
but it will take a little longer than making them in the pan.
▪ 1 glass of water 350ml
If we want our food to be even redder, we can add
▪ 1 teaspoon tomato paste
▪ Boil the sauce for 10 to 15 minutes until the vegetables are soft.
▪ Follow the recipe exactly as you see it in the video for sure success.
