Since reverse grip is garbage in real life and Anakin practiced saber vs saber quite a bit, it makes sense that he wouldn't use it. On the other hand, teaching his apprentices mostly in saber vs blaster when you need to whirl the saber around very fast makes sense for reverse grip. That may be where reverse grip is actually useful.
