Salmon & potato croquettes

I made two recipes with the same exact ingredients by doing more with @countrycrock

For my second recipe I used my leftover salmon, mashed potatoes AND broccoli to make a croquette.

This has to be the best croquette I ever had. It’s super versatile as a meal and you can enjoy it many ways but for the kids, just keep it simple and serve it as is!

These were moist and came together in less than 10 minutes. The crispy outside of the croquette was made possible by dipping the croquette in @countrycrock and then some panko bread crumbs. You will love this recipe because it stretches your ingredients from a previous meal and the taste is out of this world.

The best part is 1 salmon filet from the previous meal makes about 5 medium sized croquettes. Talk about cost savings and stretching!  #countrycrocksponsored #MorewithCrock @countrycrock

Ingredients for 5 croquettes 

2 tbsp of melted Country Crock for that extra crispiness on the croquette 
1 leftover salmon filet, flaked apart 
½ cup of leftover mashed potatoes 
5-6 broccoli florets (I like to remove the stems for this)
½ cup of panko bread crumbs 
Neutral cooking oil for frying
