I think explanation is wrong! The pressure below the card board and air pressure in side bag or container is not same thing! The sensor measures pressure of air, not the pressure exerted by cardboard on bag. When a weight is put on bag or piston, pressure inside the container increases because less volume is available for same amount of air. Pressure exerted by Apple is distributed over entire bag surface. And since bag surface is constant between two experiment, pressure should remain same for both experiments.

In fact if same experiment was done using rubber balloon, air pressure inside the bag will not increase as the balloon will be adjust the volume
