Soft And Fluffy Classic Ensaymada

How to make the Classic Ensaymada bakery style. Ensaymada is a sweet Filipino bread lathered in butter and dipped in sugar.

Here's what you'll need:
1 cup warm milk (250ml)
1 whole + 1 egg yolk
3 tbsps sugar (45g)
2 tsp instant yeast (6g)
3 and 1/2 cup bread flour (430g) or all purpose flour
1 tsp salt (5g)
1/4 cup unsalted butter (55g)
Around 1/4 cup softened butter for brushing
Granulated sugar for topping

1. In a bowl mix together milk, egg, egg yolk, sugar and instant yeast. Add flour and salt.Mix until the dough forms. Add butter, mix until fully absorbed.
2. Transfer to a floured counter. Knead until smooth and elastic. Around 7 minutes. Smooth into a ball and coat with oil. Place in a bowl and cover for 40-50 minutes or until doubled in size.
3. Punch the dough to release gas. Divide into 12 equal pieces. Smooth each into a ball. Bench rest for 10 minutes.
4. Roll out and flatten each dough ball lengthwise. Roll tightly into a log. Pinch the edges to seal. Form into a coil-like shape. Place in a lined baking sheet pan and cover for 30 minutes until doubled in size.
5. Preheat oven for 15 minutes at 180C/350F. Brush risen ensaymada with milk and bake for 20-25 minutes or until light golden.
6. Let it cool down for 10 minutes. Then brush each with softened butter. Dredge in granulated sugar.
7. Serve and enjoy!

Oh dear.i tried it yesterday using my breadmachine to mix the dough for me(bec I really dont like the feel of the dough sticking to my fingers if I do it manually.lol)and it turn out so perfect very soft ang fluffy.my husband love it.stay soft until the next day.i will add your recipe in my collection .once ived tried/ tasted a good recipe in yt, I collect it and make a note.like 5 star rating, very yummy and i also write who's yt channel this recipe is.thank you kabayan. Before, i thought ensaymada is very hard to make.bec of its extra softness.i even thought it has to do with tanzhong methods (Chinese style).I need to try your other bake good recipe especially bread.i am into bread making now ever since I got my bread machine.prior to owning one I used to bake cakes .this emsaymada was the one i always bought in our local bakeshop back in the phil.i prefer this than the one with so much topping(cheese overload and the icing.i love the simpleness of this one)

Grabe first time making ensaymada, all ingredients are available sa kitchen. Ang lambot at ang sarap. Perfect for coffee. Nagustuhn lahat ng mga kasama ko. Will definitely save this ingredients and measurement. Perfect!
