First american tourist who gets visiting the Netherlands right. You have to experience it by bike, its so chill.
And the public bathroom situation in europe, you already found out by yourself how the europeans do it. nice! Either you go in a bar or restaurant and ask politely, most owner will let you use it without buying anything, or like you did, you just enjoy a small beverage.

You really hit the nail on the head with how it's cars that create city noise, not people. A lot of US people who haven't experienced that, look at Euro cities and think "How could you live with all that noise?" but don't actually realise how quiet it is without fast vehicular traffic.
Also, cafe culture is fantastic. I'm from Melbourne, not Europe, but it's much the same here and a huge part of our city's culture. It's full of cafes where people can sit, relax, socialise, enjoy great coffee, it's a complete contrast to the corporate/Starbucks type culture of grabbing coffee on the run in the US.

I'm currently in Haarlem myself, visiting my partner's family, she has not been back in 35 years! But we had a great putting in Zandvoort, made it to Amsterdam, Delft, Den Haag, and Hoek van Holland on public transit. As a Canadian, we had to adjust to the traffic as well. What an awesome country to visit through public transit!
