Lived in UK 25 years. Never seen or heard of anyone using aged balsamic vinegar to marinade a steak. BROWN/malt vinegar is not balsamic - brown vinegar is okay for marinating things like skirt steak.

For anyone wondering what Brazilians do with picanha, we just cut it in steaks and cook it on charcoal with salt and nothing else. Maybe pepper, but usually just salt.
