You have a beautiful kitchen - so clean and bright. That is very welcome.

I veganised this using veg broth and vegan cheese and butter and a little nutritional yeast as someone else suggested and it turned out absolutely beautiful. Thank you so much Amy, I'll definitely be having this quite often

Amy’s Orzo mushroom pea recipe

I kept watching the video over each time I made it. I finally jotted down the ingredients and the recipe. You will love this! So delicious!

Garlic about 3 cloves minced
Mushrooms sliced
1 small/ medium onion diced
Olive oil to coat pan
1 cup orzo
3 cups broth
1 cup frozen peas
3 tbsp butter
Seasonings of choice
Parmesan cheese optional

Heat olive oil and sauté onions, add mushrooms and then add garlic for one minute
Add orzo and sauté with the mixture until it gets a little nutty
Add the broth and bring all to a boil, then reduce to simmer until all liquid is absorbed
Add frozen peas and butter
Also seasoning of choice salt pepper etc
Add Parmesan cheese

Nice to see some cooking going on. The frozen peas are my favorite.

Swap the chicken broth for a vegetable broth, swap the parmesan cheese for nutritional yeast and find a butter substitute and you will have a great vegan meal with low fat and none of it saturated.

Oh my God, I made this recipe for dinner tonight, substituted vegetable broth for the chicken broth and earth balance for the butter and skipped the cheese. Delicious 😘. Thank you for the recipe 😊

That looks beautiful and delicious. That would work well with Arborio rice, too, though you'd have to add the liquid a bit at a time. This looks much faster and easier...and irresistible!

Please note:
If you have small size Orzo, then pasta vs chicken broth ratio is 1cup to 1cup. I've tried your ratio 1pasta to 3broth and orzo has overcooked. This should have been mentioned on your video. just the thought.

Looks like a nice risotto. :D

Commercial mushrooms are not grown in dirt. They're grown in a sterile base. This can simply be brushed off with a vegetable brush or paper towel.

Mushrooms are highly absorbent and washing them fills them with water, inhibits the sauteé process, causing them to release a lot of liquid and steam instead of browning.

Most traditional chefs like Jaques Pepin always stress never washing mushrooms for this reason. Although more contemporary chefs (and also Julia Child) seem to go back and forth on the issue.
