Gold is actually really useful for trading with piglins and for crafting Golden Apples and Carrots, which are the best food in the game, next to Enchanted Golden Apples.

Iron is the most important thing early game but later mining it just doesn't matter, as most players will build an iron farm late game. However it is always an imporant item to have as it has so many uses, ranging from basic tools to decoration or many others.
