- 1 Box Macaroni Noodles
- 4 to 6 Cups Water
- 1 Tsp Butter
- Heavy Salt for Water

CHEESE SAUCE:
- 4 Cups Heavy Cream
- 10 to 12 Oz FRESHLY Grated Sharp Cheddar Cheese (16OZ BLOCK)
-2 Cups FRESHLY Grated Mozzarella Cheese
- 4oz Cream Cheese (Optional)
- 1 Tsp Salt or To Taste
- 1/4 Tsp Ground Mustard
- 1/2 Tsp Black Pepper
- 1/2 Tsp Paprika

FAQs and Tidbits:

1. CAN I USE MILK OR HALF AND HALF?

While you can use any type of cream or milk you prefer, heavy cream offers the highest fat content and gives the best results when making sauces. Lower-percentage creams like half and half tend to curdle or separate at higher temperatures, which would be detrimental to your cheese sauce, making it gritty or lumpy!

2. Do not overcook the macaroni! It could make your final dish mushy.

3. The cream cheese is totally optional but adds extra richness and thickness to the cheese sauce. For a sauce with a thinner result, the cream cheese can be left out.

4. If your sauce gets too thick from too much cheese, you can always add a few tablespoons of more cream OR MILK to thin it out!

5. When making macaroni and cheese, good quality cheese makes a huge difference in the end product. The most cost-efficient way to substitute expensive bags of shredded cheese like Tillamook or Sargento is to just shred your own! It gives the best results every time!

I’m so happy to finally find a recipe that does not include the velveeta cheese, a roux or five different cheeses.The seasonings was just enough, not too overpowering and the mac and cheese did not come out too thick.

I will be making this tonight. For Christmas my Son sent me some Cheese made at Washington State University. A hand made sharp white cheddar that I think will go really well in this recipe. I will also be adding some Beecher white cheddar cheese I got at Pike St Market in Seattle this last summer when I went to visit him. I’ve made this before using just regular store bought cheese and it turned out so well my family was like make that again Dad. So I’m sure it will be even better this time around.
