You say canning salt. I know you need salt with no iodine in it, but can you use any salt without iodine? Or does it have to be salt that states, 'Canning Salt'?

How to can any pepper, hot or sweet, without getting mushy? Looking for unusual ways to avoid the mush. Tried canning in very small jars...not good with time demanded.

National center for food preservation states that pickled peppers should have 1/2 inch head space also the proper water bath procedures were not followed. Not having appropriate head space can cause jars not to seal appropriately.
Also the pepper should have been added to the brine after the brine has come to a boil. Then the brine and peppers should be added to a jar from there you would need to “debubble” the jar. This step reduces the chances of having your jars break when they enter the canner.
Slightly disappointed that forjars is suggesting that this is an appropriate recipe and makes me second guess purchasing their products.
