I've had the Ninja Pro Air Oven (NPAO) for about 2 weeks and have not yet tried bread. Thank you for your video. I hope you will reconsider making more bread videos in the future.
John Sanders has a good video about air temperature control in NPAO and he showed that temperature control was excelent. This begs the question why your bread in the NPAO didn't brown on the bottom and it wasn't fully cooked. I think the answer part of the answer is found on page 2 of the owners guild which shows which of the heating elements are used for the preset functions. The are heating elements on the top, heating elements on the bottom and heating elements inside the back wall surrounding the fan. The presets Whole Roast, Air Roast, Air Fry, Pizza, Bake, and Dehydrate use only the rear element and the fan. The top and bottom quartz elements are used only for toasting or broiling.
I'm going to speculate about the lack aparent heat in the preheat cycle because this is a common complaint. I think that the NPOA measures the air temperature returning from the fan back into to the oven and not the temperature of the oven. The rise in temperature of the air stream is much faster than the temperature of the oven so if we need the oven to be at a known temperature for baking, we need to wait for 10 to 12 minutes for the oven to come to temperature. After the preheat you can reset the timer to its origional setting by pressing the start stop button twice.
Let's talk about baking in the NPOA next. Any function that only uses the rear heating element requires unobstructed air flow from the fan to cook the food. The preset functions that use the rear element recomend that you to use level 3 for single level cooking because the food sits near the center of the air flow. This may be a problem for high rising breads because of the restricted head space. I don't think that this means you can't use a lower rack but you may have to tent the top of food to keep the top from over cooking and use longer cook times to fully cook the bottoms.
Finely let's talk about why the bottom of your bread didn't brown like you expected. Please correct me if I'm wrong but I think that you used a silicone oven mat under your dough. I had never seen that done before and initially thought that it was an interesting idea. Unfortunately the down side of silicone is that it is a very poor conductor of heat and is sometimes used for oven mitts because of that quality. As an alternate you could use one of the sheet pans (inverted?) under the bread or use a preheated ceramic stone to support the dough on the rack.
I'm going to stop here with my comments but I would like to address a potential safety concern; spraying water in the oven may cause the top or bottom quartz heating element to shatter if those elements are in use or if they have been recently used to preheat the oven. Please be careful.

You can fit a 7 quart Dutch oven in the Ninja with the lid on to bake bread which makes its own steam.

I do bake in my ninja, and have found it always takes longer than any recipe recommends. Tip: when I bake soft pretzels or small dinner rolls, I typically use the fry tray, lightly oiled. And I turn the tray around half way through the baking time. That bakes it more evenly. In fact, I do that whenever I cook anything in it, on any of the functions. Also, sometimes, if I bake or reheat anything, and it cooks all the way through, but it 's not as golden brown as I want it, I'll set the oven to broil on high on the 3rd rack for an additional 1-3 minutes.

Never had any problems with baking sourdough bread in my Ninja Oven. Did not have to do all that she did. But I love my Ninja.

interesting period I watched the temperature test between the two before watching the sourdough video. It's kind of interesting to see what made you do that temperature test. I was convinced I was going to buy a Ninja foodie oven, but now I'm not so sure. That instant sourdough looked awesome!

The omni cooks hotter then the Ninja I always decrease the temp by about 20 F . With the Ninja 90 seconds is not enough to preheat I preheat mine for at least 10 minutes .

Not bad vid but for people wearing a headhones its not a pleasure. Between the loud background muisc, well it wouldn't have been irritating if your voice was at one level. As you walk away from the camera it so quiet i can barely hear you then when you're near canera it sounds like your screaming

Still getting used to my Omni. It cooks much faster than my old Kitchenaid toaster oven. There's no way that Ninja gets to 450F in 90 seconds. Even gas and coal ovens don't heat up that quickly.
