LEMON DRIZZLE CAKE 🍋

Ingredients: (x8 portions)
For the cake:
Zest of one lemon
Juice of one lemon
125 thick greek yoghurt
180ml semi skimmed milk
150g caster sugar
1/2 tsp vanilla extract
3 tbsp vegetable oil
250g plain flour
1 tsp baking powder
Pinch of salt
For the topping:
30g icing sugar
Lemon juice (to get the icing consistency you want)
Method:
🍋 Preheat your oven for 180c.
🍋 Combine your yoghurt, caster sugar, milk, vanilla extract, vegetable oil, lemon zest and lemon juice and whisk.
🍋 In another bowl, combine your flour, baking powder, soda and salt.
🍋 Add the dry ingredients to the wet and mix.
🍋 Pour the batter into a standard loaf tin. Bake for 35-40 minutes or until a knife/tester comes out clean.
🍋 Remove from the oven and leave for 10 minutes before removing from the tin.
🍋 Leave to completely cool before adding the topping.
🍋 Make your frosting by adding lemon juice to your icing sugar. Add more juice to thin and more icing sugar to thicken.
🍋 Pour on top of the cake and finish with a sprinkle of lemon zest.
