Creamy Swiss Chard with Coconut - Vegetarian

Here is the recipe:
INGREDIENTS

2 tablespoons extra-virgin olive oil
1 small onion, finely diced (about 1 cup)
2 cloves garlic, minced
2 tablespoons grated peeled fresh ginger
1 small dried hot red chile, such as chile de arbol, stemmed and crumbled
2 pounds Swiss chard (3 to 4 bunches), stems removed, torn into 2-inch pieces (about 12 packed cups)
1/2 cup light coconut milk
2 tablespoons water
Coarse salt

Heat oil in a large pot over medium heat. Add onion, garlic, ginger, and chile and cook until tender and fragrant, 6 to 8 minutes. Add chard leaves, coconut milk, and water. Cover and cook, stirring occasionally, until chard is tender, 4 to 5 minutes. Season with salt.

Grew up eating Swiss chard all the time and loved it!  My parents had a large garden and all my veggies were home grown.   For me, it's better than spinach taste-wise.  Nutritionally, it's on the same plane, almost, as spinach and kale.  Never would have though to make it like this, but this looks amazing!  Thanks for the recipe!  I know what I'm making this weekend!

Never had swiss chard before. It does remind me of spinach, or collards, but I'm sure an all different taste. Good Vid Jack!

I love that you did a vegetarian/vegan dish. As I vegetarian gone vegan I am always looking for recipes and I love your channel! Please keep up with these kind of videos! Also, how was the coconut milk on this recipe, did it come through taste wise or would you add a little more for the extra creaminess?

Usually in Australia it's called silverbeet. I've never heard of calling it swiss chard

Hey Jack - I've been getting told that I'm wasting olive oil by cooking too much with it. I've been told to cook with cheaper oils like penut oil which doesn't add any taste and then finish off by adding olive oil if I want the added flavor. And it's cheaper. Any thoughts on that?
Also - Thanks for the vegetarian recipes. I've been trying to make my diet more vegetarian because, as a diabetic, it makes my meals WAY more glucose predictable! I've been diabetic since I was 6, and vegetarian dishes are so much better for my kidney/liver health. It's just nearly impossible to find good vegetarian recipes after growing up as a carnivore on a cattle ranch. Also, having the video's is great since 90% of the recipes I find call for ingredients that I don't even know what part of the store to look in. Half the time I don't know if I should be looking in frozen foods at the grocery store or sports wear at Sears for my ingredients based on the recipes!

Raw chard can just as easily be eaten as a salad, instead of using iceberg or Romaine lettuce.  Plus, when you eat it raw, instead of cooked, you retain more nutrients.  You may wish to give that in try in one of your future shows.

Dude those swiss things grow around my neighborhood my friend says if you dip the red stems in sugar it tastes like an apple.
