I think the issue with the first pie was due to the fact that you used frozen instead of fresh blueberries in the pie. The frozen blueberries would have naturally released more liquid over time while baking, therefore you would have needed to cook the pie for longer or added a bit more cornstarch to the mix before baking. When it comes to fruit pies, the fresher the fruit the better

Check out Babish’s pie recipe - he uses corn starch to thicken and leaves them in the sugar etc to macerate a bit.

The liquid is because your berries were frozen
