Is the water a certain temperature for the yeast?

I did the steps shown in the video and my dough was very dry and didnt look like your consistency. Im going to try again and add 1/2cup more water. The dough in the first batch was very tough fold. I used dry yeast packets found in the store. Idk if that made a difference?
