SMASHED PORTOBELLO 🍄 BURGERS👇
Welcome to episode 4 of Mushroom 🍄 Musings.
This series is all about how you can transform the every day mushroom into delicious meaty mains that everyone will love! This burger is super simple but packs flavour and you won’t miss the meat! Everyone asked for a straight veggie burger option and this one is it!!!
Ingredients:
2 portobello mushrooms, stems trimmed and gills removed
2 tbsp olive oil
1 tbsp corn starch
1 tsp salt
1 tsp mushroom powder (optional)
All your favourite burger toppings etc.
The cheese I used is the oat based Daiya Cheddar slices
Method:
1. Place the cleaned portobello mushrooms on a plate and add olive oil, corn starch, salt and mushroom powder. Rub everything into the mushrooms and set aside.
2. In a cast iron, over medium heat, add 2 tbsp of olive oil. Heat for 30 seconds and then add the mushrooms. Cook for 2 minutes, flip and add a splash of water and cover with a tight lid. Allow the mushrooms to steam for 5 minutes.
3. Remove the lid and flip the mushrooms. With a smaller pan, apply pressure and push on the mushrooms, careful not to break the mushrooms. You want to keep them whole. Cook until golden brown on one side, flip and continue to apply pressure with the smaller pan until golden on the other side.
4. Once they are thin and crispy, add cheese and a splash of water. Cover with a lid to allow cheese to melt.
5. Build your burgers and dig in!
