Classic Caesar Salad with homemade croutons and poached eggs

This classic Caesar Salad is a great idea for that tasty lazy Sunday lunch. A good Caesar Salad should not see the poached eggs until literally, you are just carrying the dish to the table. Poached eggs tend to keep on cooking, so time is of the essence.
Dressing:
5-6 Anchovies chopped
2 tbsp freshly squeezed lemon juice
1/2 Cup of cream
2 cloves garlic finely cropped
Ground black pepper to taste
Croutons:
2 slices Vogel's thin cut bread chopped into cubes (or any wholegrain bread )
2 tbsp extra virgin olive oil
1/4 of chopped oregano and thyme combined
Salad Base:
1 bag of baby cos lettuce leaves
2 large rashers shoulder or streaky bacon (4 rashers if streaky)
5 Anchovies chopped
5 Sweet cherry tomatoes halved
1 cup of croutons
1 handful of parmesan cheese finely grated
2 - 3 poached eggs
Ground black pepper
