I made pasta last week and froze it for Christmas Eve. 6 dozen ravioli and 3 pounds of spaghetti. My ratio is similar. 600 g flour, 360 g wet ingredients, 4 whole eggs, 6 yolks, and water to reach the correct weight. Making more tomorrow.

Great video. I have had a lot of trouble with crumbly pasta and I'm excited to use your technique tonight. I have to ask a very basic "beginner's Question": you said to put it in the fridge in plastic to let it rest. You didn't say for how long to leave it there. I will need to search the internet to find out how long pasta dough needs to rest in a fridge.

The egg to flour ratio is perfect. I weigh the eggs first then weigh out 1.5 times that in flour. If I have four eggs that weigh 200 grams, then I weigh out 300 grams of flour. A little salt and baking powder doesn't hurt either. One day, I'll get my hands on 00 flour.

Very good recipe! I used regular flour, I put the already made noodle in the freezer for a few days, the texture is very good, tasted like Japanese ramen. Thanks for sharing.
