Used to go to Lupa once a week for this back when I was working near there in the mid-late 00’s. It’s basically the perfect dish.

Tried this today. May not be 100% authentic if some of the other comments are to be believed, but it was excellent nonetheless.

Make sure you char the onion and pancetta, and take some time to reduce the sauce once you've added the fresh tomatoes for a more intense flavour. Careful with the salt because of the pancetta and Parmigianino/Pecorino.

Oh, my. Yes, this the one. This is the best and simplest amatriciana recipe and the video is superb, from concept, to photography, to editing, to music.

Seriously, how does this channel not have more views and subscribers? Such high definition and well edited videos, wonderful meals and cutting it straight to the point.
