It’s the BEST part of the Chuck arm roast! I know at our shop we sell them as just Chuck arms so if you’re ever trying to buy one somewhere they usually don’t have it marked as a “flatiron” but it’s really easy to tell apart from the other arm pieces

The best steak in my opinion, and my favorite to cut at the shop. One day I will get that gristle strip out just as quick as you did I swear no matter how many times I see you guys do it im always blown away 😂 but you make me strive to be a better meat cutter every day. It’s been a fun journey learning it all this past year and a half. I almost gave up in the first few months but then I saw one of your videos and it completely changed my perspective. Thank you guys for everything!👊

The way you pulled that gristle strip is really similar to how I fillet certain fish, just get a hold and run it back between the meat and the skin. Love it

And here I am seeing some butchers taking their time with trimming it (nothing wrong with that). This has to be the quickest way I’ve seen someone trimming a flat iron, I love it
