When your knife is so sharp, it doesn't actually "cut" beef. It just swipes through it, separating the atoms.

The cap muscle that came off first is generally softer and juicier than the round cut, it has a looser grain an is good roasted at a low temperature 55’c .

Could you please do a recipe using the beef rose meat without just turning it into ground. This is commonly used in Mexican cuisine but hardly used at all in USA / Canada / UK / Australia / NZ except sometimes to add to the scraps that get ground.
