The reason you dont see people turning on and off the lightsaber is for two reasons. One, is that the jedi and sith both dislike the technique. The jedi think its dishonest and the sith think its cowardly. And secondly, turning the saber on and off isnt instant (Most of the time. The star wars lore is not consistant)

Some HEMA fencers would say that the better way to wield a lightsaber is to treat it like a rapier and focus more on thrusts and quick cuts on account of the canonical weightlessness of the blade and the omnidirectional nature of the blade, allowing for tight and precise point work.

So an interesting point you brought up was the inherent danger of wielding the lightsaber and this is noted in the series quite a few times.

Jedi and Sith specifically train to both be aware of the blade and have ultra precise control with the weapon. Blade work tends to also translate with your mastery and control over the Force as the weapons are deeply connected with the Force itself. People who first learn how to use a Lightsaber if it’s not at the Jedi temple often note how “heavy” or “unbalanced” the weapon seems and is often the first thing they learn how to control alongside the force.

An example of a non force sensitive struggling with a lightsaber would be Din Dijarin with the Darksaber and that’s cause he kept trying to use it like a regular sword but it was feeding off of the conflict in his heart over missing Grogu. This actually resulted in him cutting his leg while in a fight trying to use the blade which naturally made things harder for him.

It’s an interesting weapon for sure, one might say a more elegant weapon than a blaster.

Trakata is the term given to the practice of fighting utilising turning the lightsaber on and off. A good example of how it can be used is in Star Wars Visions.

It's actually really tricky to use once you think about it. Especially true in the context of lightsaber duels where turning your saber off basically means stripping yourself of the ability to block or parry.

In Starwars lore, Turning on and off of light sabers are called Trakata and is highly frowned upon by the Jedi and Sith for it unsportsmanlike behavior, there is also a Lightsaber like this known as Flicker Phase Lightsaber.

I like how the canon explanation for why Lightsabers aren’t turned on and off in fights is just that everyone thinks that it’s a cheap trick.
As for the whole blade being lethal, that’s not how it was originally intended. Originally, Lucas just wanted regular blades which were glowing, but the tech wasn’t good enough to display that. I think there are even some scenes in the original trilogy where the ‘dull’ side of the blade hits something and doesn’t do much

The trick of going off and on is actually a thing. Look into Star Wars lore. You could talk about it in a video. It was where the lightsaber user would randomly turn the lightsaber off and on during a fight, making them unpredictable. It was banned from being used by both the sith and jedi for their own respective reasons
