To Make Biryani Brinjal Gravy
Peanut - 1/4 Cup
Brinjal - 300 Gms
Onion - 1 No.
Green Chilli - 2 Nos
Ginger Garlic Paste - 1 Tsp
Tomato - 1 No.
Tamarind Puree - 1/2 Cup
Water
Coriander Leaves
Method:
1. Take peanuts in a pan, roast them until they are golden brown in colour,
2. Add sesame seeds and fenugreek seeds to the same pan.
3. Roast them until they start crackling and then put them aside on a plate.
4. Take oil in a kadai and add the chopped brinjals.
5. Saute until they have turned dark in color and then remove them from the kadai.
6. To the same kadai, add mustard seeds, cumin seeds, fenugreek seeds, peppercorns, red chillies and saute.
7. Once the mustard seeds start crackling, add chopped onions, slit green chillies, curry leaves and saute until the onions are golden brown in color.
8. Add ginger garlic paste, mix and add turmeric powder, red chilli powder, salt, coriander powder and mix well.
9. Add chopped tomatoes, mix and add water. Cook until the tomatoes are mushy and no more raw.
10. To this, add fried brinjals and mix well. Add tamarind puree and mix well.
11. Add water and cook for 5 minutes by covering the kadai with a lid.
12. After 5 mins, add the grounded peanut, sesame powder.
13. Check for seasoning at this point and add salt/chilli powder if required. Cover the kadai with a lid and cook the curry for 10 mins.
14. After the oil separates from the gravy post 10 minutes, add jaggery and mix well.
15. Finally, garnish the curry with coriander leaves.
16. Brinjal Gravy for Biryani is ready to be served with any Biryani of your choice.
