Vietnamese Braised Oxtail

Ingredients

~2lbs Oxtail
4-6 Carrots(chopped into large pieces)
1tbsp Dried chili flakes
1tbsp Five spice
1tbsp Brown sugar
2tbsp Fish sauce
1tbsp Soy sauce
2stalks Lemon grass(one minced, one whole chopped in half)
2tbsp Shallot(minced)
2tbsp Garlic(minced)
1 Cinnamon stick
3pieces Star Anise
4slices Ginger
3tbsp Tomato paste
16oz Coconut water
2cups Beef stock

Instruction

1: Add minced lemon grass, five spice, brown sugar, fish sauce, soy sauce, chili flakes, half of the shallots, and half of the garlic together into a large mixing bowl.
2: Add oxtail to the mixture and marinade overnight.
3: Peel and chop carrot, set aside.
4: Coat pan with oil and brown oxtail, remove from heat.
5: If needed, add a little bit of water to pan to loosen and wipe away burnt areas.
6: Add a bit more oil to pan, put the rest of the garlic, shallot, sliced ginger, tomato paste, star anise, cinnamon stick, and lemon grass together, cook for 1 minute.
7: Add oxtail back to pot with coconut water, beef stock, and bring to boil.
8: Lower the heat and simmer for 1 hour.
9: Add in carrots after 1 hour and cover to cook from another hour.
10: Serve with rice!
