This Forever Changed How I Eat Bacon on Burgers

Bacon on burgers may not be your thing. It wasn't mine for years. I didn't like the texture, ratio, or structure it would give to the burger.

Then @adventuresofafatguy got inspired by an old episode of @guyfieri on DDD going to @hodads1502 and spotted a clip of them boiling the bacon.

We didn't know how long to boil it for, or what other steps were involved, so after a couple tests and a chat about our findings, THIS is the recipe we found.

Recipe:

2-3 strips of bacon per burger (Depending on how bacony you like it)

Boil the bacon for about 5-7 minutes. It doesn't take long, but without this step, the patty just doesn't hold together at all.

Give it a rough chop and then make a pile on a cast iron pan or flattop grill. Make it the same diameter that you want the final patty, but 2-3 times as thick. Then as the bacon shrinks and comes together, it will form a thin smash patty.

Place a weight or lid on the patty while it cooks for 3-4 minutes, and when it is golden brown on the edges, give it a flip and cook for another 2-3 minutes on the other side.

These are actually great to make ahead of time and just toss on the burger as people want them. Like little bacon discs. Crispy and delicious.

I've never had an issue with just putting bacon strips on a burger. If they're crispy enough, you'll just bite right through them. I just make sure they don't hang off the side. Interesting idea, though, I must say.
