Ingredients and Measurements:
2 sticks unsalted softened butter (1 cup)
1/2 cup white sugar
1/2 cup brown sugar
2 large eggs
1/4 cup + 2 tbsp. evaporated or whole milk
1 cup + 2 tbsp. all purpose flour
1/2 tbsp. baking powder
1/4 tsp. salt
1/2 tsp. grated nutmeg
1 tbsp. mixed essence
1/3 cup cream soda (you can use other light sodas too)
extra butter and flour to grease the pan

I never know what to do with flat soda after a holiday or birthday party at my house. In order to reduce waste, I am starting to use my left over flat soda in cakes. I will be trying this recipe for my cream soda!

It was fun seeing the process. If I had seen it a few days ago, I may have attempted it for Xmas but my house is laden with all kinds of goodies, it could be construed as gluten if I make anything else. I certainly attempt this recipe in the near future!
