They look fantastic. I wonder whether the ricotta/mozzarella filling becomes even somewhat warm/melted inside from the little bit of heat after wrapping them up or whether you are eating cheese that stays pretty cold, or even room temperature if that's how you started it out. Either way they look very tasty. I just know I would wind up with a little bowl of my sauce on the side to dip them in.
