2.5 lbs of Brisket (Flank is the traditional cut of meat for Ropa Vieja)
2 tbsp sofrito
1 tbsp ground cumin
1 tbsp black pepper
1 tbsp oregano
2 orange sazon packets
2 tbsp garlic paste
1 tbsp soy sauce
1 tbsp oil
3 cups of water
4 dried bay leaves
1 yellow onion
8 gloves of minced garlic
1/3 red bell pepper
1/3 cubanello pepper
1/2 green bell pepper
Bunch of cilantro
3 tbsp tomato paste (more to taste)
6 olives
