That sauce is so broken. Monter au beurre. You heat up the hot sauce, the turn the heat on low or off and add cold (emulsified) butter to the sauce a bit at a time and whisk it in. It keeps the sauce from breaking like in the video.

I usually cook a bit of garlic in some butter at the beginning, add the hot sauce, then mount with butter. Finish with some lemon juice if you want.
