🍳 PINTXOS 🍳
Food is a big deal in Bilbao. The Basque Country has more Michelin stars per capita than anywhere else in the world and pintxos, bite size snacks if you have the mouth of a horse, line up the bars across town.
But where should newbies start?
Mercado de la Ribera by the river is an accessible entry point, with all the classics from croquetas to La Gilda (the spicy olive on a stick medley that came about as a symbol of resistance during the Franco era.)
Another great spot is the Michelin starred pintxos spot Gure Toki in Plaza Nueva in the Old Town. Get your elbows ready to make it to the front - and to find a seat - but enjoy curious combinations like sausage and jam croissants, along with favourites like pimientos de padron.
Finally, don't miss the Basque sweet treat, the Carolina. A cross between a pastel de nata and an upwardly spiral meringue, it's best washed down with txakoli, the local white wine.
Bon appetit! Or, rather, in the Basque Country, on egin!
