This is during A Short Walk in a Pretty Town during Chapter 3. It's very clear to see the differences in Arthur's mindset here.
Low honour Arthur coldly states the facts of what happened and then immediately moves to write about the confederate gold. High honour Arthur reflects on his relationship with Sean and then the gang situation as a whole where he is concerned that they are all headed for trouble.

Tbh I didn’t really know that the way he writes about sean’s death had a difference depending on your honor level until now I’m always the high honor Arthur but I’m planning to do a low honor run to see the differences in everything

I’ve never seen the bad honour cutscene and it’s really weird to see Arthur talks about Sean like this and to see Sean’s dead body like this is real bad.

The symbolism of the animal shown in each scene is quite profound. Low honour shows a vulture which are known for being scavengers which is laregly a frowned upon and seen as disgusting. Whereas in the high honour it shows an eagle which are birds of prey and are viewed as noble, beautiful and strong.

I could not bring myself to have a low honor Arthur. High Honor Arthur is the best choice for me.
