Best cooking advice I've learned this year. Thank you!

I used cornstarch because I didn't have anything else on hand but next time I'll try the tapioca.
I find reverse searing in the oven and frying on cast iron pan tasted better when I used the cornstarch compared to the BBQ grill 🤷‍♂️. There was a huge improvement in crust and juiciness
