I think the wood glue is your best bet for gluing the blocks together. But you may have used to much. Try painting it on with a paint brush or q tip. Press together and let it dry. It take about an hour to dry enough to handle. If you use hot melt glue it dries quickly and is never a tight bond, it doesn't "flatten out" enough to avoid gaps when you glue it to another block. Be patient. You are talented and some skills take a bit of trial and error. You will get the hand of it. When it comes to wood glue less is enough. Good luck!
