HONEY MUSTARD SALMON

Serves 2

Ingredients:

- 2 4o. Filet of skinless salmon
- 2 tablespoons of mayonnaise
- 2 spoons of honey mustard
- Oil for frying ( as needed)
- 2 tablespoons lemon juice
- 1/2 teaspsoon minced shallots
- 1/4 cup cold butter
- 1 tablespoon chopped parsley
- Zest from 1 lemon
- Salt to taste

Optional garnish: chives

Pair with vegetable of choice

Instructions

1. Combine the Mayonaise and honey mustard together. Give it a mix then set aside

2. For the lemon butter sauce start by adding the lemon juice and shallot to a small pan on low heat. Let it reduce for a little then slowly whisk in the butter.

3. Once the butter is emulsified. Add parsley, lemon zest, and finish with salt to taste

4. Lightly seasoned the salmon with salt. Add oil for a pan on medium heat. When the oil begins to shimmer add your salmon.

5. Cook until it’s 3/4 of the way done then carefully drain the oil, top with honey mustard mix and broil on high for 1-2 minutes of until your desired doneness

6. Remove and serve with the lemon butter sauce and your favorite vegetable
