The Crew 2 haves some of this art stuff but this new NFS haves it like more than twice and I'm beginning to dig it. I heard that there's also a way to turn them off so if it get to nauseating or annoying then there's that option at least but can't wait for this game.

Haven't seen anyone mention this yet, and it was only noticeable in this 4k60fps upload, but at 0:23 on the right you can see 2 pedestrians next to the building passing by, running away. That's going to add so much more immersion to the world. NFS has never done ground level pedestrians (probably to keep the PG rating) so it's really cool to see them around this time.

I don't expect to be able to hit them and I don't desire to, it'll probably be like animals in FH5, always perfectly dodging your every move. But it's damn cool to see such an intrinsic detail to what makes a city atmosphere feel so much more real finally make its first ever debut in NFS (I'm not including the out of bounds ones from Payback or festival go-ers from Heat).
