For 6 muffins

INGREDIENTS:
* 2 rennet apples
* 130 g butter
* 120 g of powdered sugar
* 2 eggs
* 140 g flour
* 6 g baking powder
* 1/2 lemon peel
* 1 tsp of vanillin
* salt

METHOD:
- Peel and cube the 2 apples and soak them in a bowl with some cold water in which you will have added lemon juice; this step is important to prevent oxidation and to ensure that the apples retain their natural white color.
- Take the 2 eggs and separate the yolks from the whites. The egg whites should be beaten until stiff with a pinch of salt and set aside momentarily.
- Inside another bowl, process the sugar and butter (remember to take it out of the refrigerator a little before setting to work) with electric whips until smooth.
- Add the egg yolks, but carefully, one at a time. For the recipe to work well, you must in fact give the cream time to absorb the first yolk before adding the second.
- Mix again and then add the flour and baking powder. Sift and then add the vanillin as well.
- Now add the grated zest of half a lemon and the egg whites, moving with a spatula from top to bottom so as not to disassemble the egg whites.

- Now take a muffin mold, place and fill them 1/3.
- Add the apple cubes that you will have removed from the water and more of the mixture to cover everything. Then add more cubes and continue filling the ramekins in layers until the apple pies are completed.
- Place the mold in the preheated oven at 180°C (350°F) for about 15 minutes. When the cupcakes are done baking, when they are lightly browned, take them out of the oven and let them cool to room temperature.
- Sprinkle with powdered sugar and serve at the table.
