Pickles turn that color due to the tumeric put in the pickling mixture :) We make bread and butter pickles every year and can them. There's quite a few herbs and things that people can put in with pickles to alter the flavor a bit, which can also change the color.

As for the bumpiness on the pickles, that's on cucumbers, too. Some are smooth, others are bumpy...just depends on the variety of cucumber you grow!
