White Bean Salad Easy 🥰 Quick and Delicious

Preparation time : 10 - 15 minutes
Cooking : 5 minutes ( in a pressure cooker )
Cooking time : 30 minutes ( Waiting for it to open )
Total time: 1:20 hours
Portions : 6 to 8 people.

Components :
▪ We will clean our beans thoroughly on the table.
▪ When my beans swell I will wash them at least three times.
▪ The clarification we are making is for 1 kg of beans that have been puffed.
▪ The 1/2 kg of dry beans. When we soak it, it becomes 1 kg / and when we cook it is for 6 to 8 people.
▪ 3 liters of bottled water
▪ 1 large carrot
▪ 2 - 3 stalks of celery
(We have packed the package if you remember and stored it in the freezer)
▪ 1 large dry onion finely chopped
▪ 1 mug extra virgin olive oil ( 200 ml )
▪ 1 teaspoon of salt
▪ 1/2 teaspoon black pepper
▪ 8 tablespoons of vinegar
(salt, pepper, vinegar / at will )
▪ Optionally you can add: Extra virgin olive oil and sweet paprika.If we like hot things, we can add hot pepper.
▪ In case you have a problem with your stomach. It would be good to throw away the first water It will only boil for 5 minutes and do this process with the second water.
▪ If we need to add water during boiling, always add boiling water so that they do not stop boiling.
▪ When you open the pressure cooker and see that the beans are not cooked properly then you will continue boiling.
▪ The addition of olive oil at the last boil makes the bean paste more mushy and makes it very tasty with a thick broth.
⇒ We prefer beans from mountainous areas or from northern Greece (e.g. Florina, Kastoria, Kozani etc.) are of excellent quality and very tasty. ***Avoid yellowed and cracked beans (Because yellowing is an indication that they are of an old vintage. The older the beans are, the more boiling they need).
