One thing I find that helps if you don't have a convection oven is having high quality pans. They don't have to be expensive though. For cookies I typically use a Nordic Ware half sheet pans what's your basically the same style of sheet pans you'll find in a restaurant

What if you have a completely analog convection oven? I assume on most of those ovens, especially if they are older you would still have to lower the temperature by 25° as I do not believe those automatically lower the temperature for you.
