I made this. It's ok. Not great, not bad. Unless you're using the leanest of beef you are inevitably going to have a lot of grease you need to take care of or the tortilla is going to get funky.

These are good, but whenever I make them I cannot flip it and brown the tortilla because it becomes greasy and soggy rather than brown and crispy. Any suggestions?
