Yep, we always aim for that "paper tearing" sound, but I usually only go for 1-2 seconds for a thin layer of microfoam if its getting whipped cream

It a good video and its true but it also depends on what type of milk youre working with, I remember when I was working in a caffe, I was confused in the beginning as to why milk comes out wrong when I was doing all the steps acc to instructions

Use a thermometer or time it once you establish a number of seconds. You will most likely stop under your temp or over if your not sensative to heat.

Can you also do this with almond, soy, or oat milk? I'm just asking 'cause I have a severe adult-onset allergy to milk proteins, whey & casein...the last time I had it, I had a 102°F (39°C) fever for 4 days straight.
