Love KFC coleslaw? Well, this recipe will give you your fix and it might just be better and more KFC than the real thing. You have to give it a try to find out.
Ingredients:
1 cabbage (makes about 8 cups when diced)
1 carrot
2 Tbs grated onions
1/3 cup sugar
1/2 tsp salt
1/8 tsp white pepper
1/2 cup mayonnaise
1/2 cup buttermilk
2 Tbs apple cider vinegar
3 Tbs lemon juice
Instructions
Note: in the video I make a much smaller portion.
Method:
In a food processor, pulse (in stop start pulses) the cabbage and carrot in small batches until you get the same consistency as KFC coleslaw. Don’t over blitz it as that with result in a fine mush.
Grate the onion on a mircoplane (zester).
Transfer the cabbage & carrot to a large bowl.
In another bowl whisk the rest of the other ingredients together until combined.
Pour this mixture into the cabbage & carrot bowl, then mix together thoroughly.
Baaam! You have KFC style coleslaw. Probably better than the real thing.
You can eat it now or but it is better to put the coleslaw in the refrigerator to rest eg. 4-8 hours, then eat it. This coleslaw tastes better the next day.
It goes great with chicken or ribs!
Enjoy!
