This simple yet hearty dish of beans and courgettes is a vegan delight. The fresh borlotti beans are cooked down with lots of garlic and cherry tomatoes, which result in a thickened sweet tomato sauce. The dish is finished with a zingy salsa verde of fresh herbs, capers and lemon juice.

Made this last night. Subbed dried Pinto beans and whatever herbs we had in the garden (sage, basil, cilantro, bit of rosemary). Simple but elegant. Low stress with not that much active time needed. 3/3 I served it to gave the thumbs up!

Looks delish ... I tried it and it WAS delish. BTW it's very hard to find recipes for non dried beans so thanks for this. 😊
