This isn't what I would call a glitch and it happens for a pretty simple reason.

The game is storing the score as an 8 bit integer, meaning, a value in binary 8 digits long. There are only 256 possible values that any 8 bit integer can represent. If you include 0, then the game won't be able to create a score beyond 255.

The reason the limit is typically 255 is due to the fact that Madden probably stores the score as an 8-bit (binary) integer.
Meaning, a series of eight boolean digits (1 or 0) in the form 2^8 2^7 2^6 ... 2^0. is 255 in binary notation. You can't add more to this number. In some games, there is a rollover where adding another score will reset this back to 0. I have personally seen this phenomenon when I reset the season HR counter to 0 for my player on RTTS in MLB The Show by hitting 256 (because I was playing on beginner with all the sliders in my favor). Another place you will see this phenomenon is in the classic game PacMan. Reaching level 256 in PacMan causes some strange things to happen with the screen due to the game's inability to properly store the current level. The YouTube channel Retro Game Mechanics Explained did a cool video on this, I believe. Worth a watch.
