One Cabbage, Four Recipes

Today, I bring you four easy recipes, all made with a humble head of cabbage. Sauerkraut, Sauteed Cabbage, Kimchi, Masala Dumplings - Quarantine cooking at it's finest!

► Sauerkraut Recipe (for 1 medium head of cabbage)
1 head cabbage, shredded
1-2 carrots, grated
1 Tbsp salt
1/2 Tbsp sugar
1 tsp black peppercorns
1 tsp caraway seeds
1 tsp mustard seeds

► Quarantine Kimchi (Kimchi Slaw)
1/4 head cabbage, shredded, salted & softened
1/2 carrot, grated
1 cup yoghurt
1 tsp mustard
1 tsp chili flakes
hot sauce to taste
1 clove garlic, minced
1 tsp ginger, minced
1 handful scallions, roughly minced
2 Tbsp lemon juice

► Sauteed Cabbage
1/4 head cabbage, hand torn
2 Tbsp oil
1 thumb cured sausage, salami or bacon
1/2 onion, minced
salt & pepper to taste
pinch of cinnamon
1 Tbsp dark soy sauce

► Masala Cabbage Dumplings
1/2 Tbsp cumin
1 tsp chili flakes
shredded cabbage leftovers
1/2 onion, diced
salt & pepper
1/3 cup coconut milk
2 slightly overcooked potatoes
8 large leaves of cabbage, blanched until soft, for wrapping

Cabbage...one of my favorites. So versatile, from down-home southern style to eastern European to Asian stir fry, it's all good! YUM

In Brazil the immigrant Arabs adapted the Yabrak to be done with cabbage leaves instead of grape leaves!! Maybe would be a nice addition to this list. ;)

Funny you mentioned this, I made 2 head of cabbage worth of sauerkraut before this muck happened... and I’m glad I did. Great job providing awesome content during this public health crisis. Those of us in public health (and foodies) are forever grateful.

the last recipe, even though it was a dumpling idea, is a kind of mashup/fusion-ish idea of a cabbage roll. Love the new series. Great idea, for now and the future.

The Cabbage Dumplings remembers me of korean barbeque where grill the meat, put it cabbage together with onion, rice etc and eat it exactly after we created it. <3 soooo good

Im Poland we make something like sarmas, they're called gołąbki, its basically rice and meat stuffed cabbage rolls, often with tomato or mushroom sauce. Our most popular cabbage dish doe is BIGOS. Long stewed fresh and fermented cabbage with all kinds of meat and sausage (ribs, pork knuckles) often wild boar, with touches of plums and mushrooms, tons of spices, tastes better after a long time in the fridge.

Happened to have half a head of cabbage leftover from making corned beef and hash for St. Patties. The dumpling recipe was a great way to use it up! Used a sweet potato and Korean red pepper powder as substitutes, but still tasted great!

I just recently bought some lacto-fermented sauerkraut with carrots for the first time, instead of the stuff with wine vinegar I normally use in Germany. It was an absolute revelation, so much more flavourful. Can't wait to try and make it myself at home!
