Interesting. I usually get five 750ml bottles out of a gallon batch of traditional mead like this. But then again I use proper racking techniques, never pouring since that adds oxygen which makes it oxidize. It can also turn low % alcohol into vinegar. Maybe that's why they weren't thrilled while drinking it.

Are you able to age the bottles of mead after cold crashing, or must they stay in the fridge from that point on?

You need to invest in an auto siphon with tubing, hydrometer, and test tube. Then you won't get any of the sediment into the bottles. Happy meading!
