The simplest and best pork chops I’ve had in a long time 😱 I wanted to give a pork chop the kinda steakhouse broiler treatment and see what happens. The intense radiant heat unlocks so much depth of flavour from the browning and caramelization, it was unbelievable… the sound and colour almost make them look breaded.
The benefit of this method - there is no additional oil or fat required compared to a pan sear, it really is just pure pork flavour with salt and deliciousness seared meat. The dry brine on pretty well all meat is game changer so I encourage you try some dry brined chops int he pan or on the girl it is always legit.
1. Season both sides with Kosher Salt
2. On a wire rack uncovered in the fridge overnight
3. Salt evenly seasons, tenderizes and drys the exterior for caramelization
4. Temper, take out 30 minutes before cooking
5. Hard sear under the broiler
6. Flip every 1-2 ,minutes for even cooking
7. Pull at 135f-138f internal temperature
8. Rest 5-8 minutes to land at 140-145f
9. Slice and serve
