No Bake Pumpkin Cheesecake with Gingersnap Crust

Creamy, dreamy, no-bake pumpkin cheesecake.

▢ 2 cups Gingersnap Crumbs (200 grams)(use gluten-free gingersnap cookies if you need a gluten-free option)
▢ 2 Tablespoons Light Brown Sugar
▢ 1/4 teaspoon Ground Cinnamon
▢ 6 Tablespoons Unsalted Butter, melted
For the filling:
▢ 1 cup Heavy / Whipping Cream, very cold
▢ 2 8-ounce packages Cream Cheese, softened
▢ 1 14-ounce can Libby's Pure Pumpkin (see note)
▢ 3/4 cup White Sugar
▢ 1 Tablespoon Pumpkin Pie Spice
▢ 2 teaspoons Pure Vanilla Extract

I make something like this every year. Just not as a pie. Pumpkin dip with graham crackers. 3 ingredients. Pumpkin in a can & whip cream. I sometimes add allspice to give it a little kick. I’m guessing this is almost the same recipe. Just melt butter with the ginger snap cookies for the crust & use the back of a spoon to press into the cake pan. Easy & simple.😻

I think it’s pumpkin fluff. I did this once. It was good. I’m not into not baking pumpkin for some weird reason but it was good. I used Paula deens recipe

A CHEAT LEMON PIE is great too. One can frozen lemon juice, thawed. One can condenced sweet cream, one tub cool whip and the two pie shells, gram kind. Mix add to shells freeze. Yumm so fast and very tasty.
