Freeze your bowl and the heavy whipping cream about 30mins before whipping. It'll be stiffer giving you more volume. Looks good 👍🏾

I would bake the crust so it’s more flavorful and crisp. Unbaked almond flour doesn’t taste great. Let it cool then add your cheesecake filling

I live in Ecuador where I cannot get pumpkin puree, but I did get cubed pumpkin. I steamed it in the Instant Pot and will make this pie tomorrow. I am excited to try it.

I just tried it out, it will be in the fridge ready for Tuesday, had to adjust my Thanksgiving due to my work schedule, so I am eating on 11/28/2023. I added extra ginger spice, it was super good when I licked the bowl. Thank you! I will put the pecans on the day of serving because they might get stale in the fridge, I might even toast them a bit and then top this beauty with roasted pecans. Thank you thank you thank you! Tip: Put your whipping cream in a large jar and then put your stick blender in the jar. No mess.

I put my bowl in the sink to avoid splatter all over as well as a deeper bowl! Looks so yummy 🤤!

Thank you for the inspiration! I did substitute allulose for the erythritol and mixed in a packet of Knox gelatin (bloomed and melted) with the pumpkin mixture before folding in the whipped cream. Then spooned it into dessert cups as a mousse instead of into a pie crust. Amazing! 🍨

Looks tasty like the pumpkin muffins. If you have a Costco membership too can get almond flour for a better price than the grocery store. Glad to see some gluten free recipes for those of us that can’t tolerate it.
